  • 1 tablespoon cornstarch
  • 2 tablespoons sugar per egg white

Instructions

  1. Cook cornstarch, sugar, and water until thick and clear.
  2. Cool completely.
  3. Beat egg whites until stiff.
  4. Beat in cooled mixture.
  5. Meringue cuts easily and will not shrink or weep.
