Exotic Ginger Lemonade

- Place the sugar and 4 cups cold water in a saucepan and bring to a boil, stirring. Add the ginger and lemongrass and simmer for 10 mins. Remove from the heat and leave to cool. Transfer to a large pitcher and chill for 1 hour.
- Add the mineral water to the pitcher and stir well. Divide the limes among eight glasses, then fill with some ice cubes. Pour over the lemonade and serve.
