A vibrant Fijian chicken marinade combining soy sauce, ginger, garlic, and sugar that infuses chicken with bold, savory flavors, perfect for a flavorful grilled or baked dish.

Ingredients

  • 5 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 tsp minced garlic
  • 1 1/2 cloves chopped garlic

Instructions

  1. Mix soy sauce, sugar, minced garlic, and ginger sherry or chopped ginger in a bowl.
  2. Put chicken parts in a plastic storage bag.
  3. Pour the marinade over the chicken in the bag.
  4. Squeeze all the air out of the bag and seal.
  5. Refrigerate for at least 3 hours.
  6. Bake the chicken as usual, pouring remaining sauce over the chicken before serving.
