Ingredients

  • 4 c. cooked potatoes, diced (about 6 medium potatoes)
  • 2 c. sliced onions
  • 2 Tbsp. minced parsley
  • 2 Tbsp. chopped pimento
  • 1/2 tsp. salt
  • 1/4 c. oil

Instructions

  1. Combine potatoes, onions, parsley and pimento.
  2. Add seasoning. Brown in hot oil until golden brown and crisp.
  3. Sprinkle with cheese.
