Fluffy Peach Cake

A light and fluffy peach cake layered with fresh peaches and whipped topping, perfect for summer gatherings or a sweet, fruity dessert everyone will enjoy.

Ingredients

  • 1 pkg. SuperMoist light yellow cake mix (no cholesterol recipe)
  • 1 (16 oz.) can sliced peaches
  • 1 (8 oz.) container frozen light whipped topping, thawed
  • 1 pkg. sugar-free vanilla flavor instant pudding and pie filling (4-serving size)

Instructions

  1. Preheat oven to 350°F.
  2. Spray three 8-inch round cake pans with nonstick cooking spray.
  3. Prepare cake mix as directed, following no cholesterol recipe.
  4. Spoon batter evenly into the prepared pans.
  5. Bake for 25 minutes until a toothpick inserted in the center comes out clean.
  6. Cool the cakes in the pans for ten minutes.
  7. Drain peach juice into a large bowl.
  8. Chop the sliced peaches.
  9. Add the whipped topping, pudding mix, and chopped peaches to the bowl, stirring gently to combine.
  10. Refrigerate the peach mixture, covered, until ready to assemble the cake.
  11. Place one cake layer on a serving plate.
  12. Spread 1/4 cup of the peach mixture over the first layer.
  13. Place the second cake layer on top.
  14. Spread another 1/4 cup of the peach mixture over the second layer.
  15. Top with the third cake layer.
  16. Frost the top and sides of the cake with the remaining peach mixture.
  17. Refrigerate the cake until ready to serve.
