Fluffy Sunshine Cake

Ingredients

  • 2/3 c. shortening
  • 1 Tbsp. grated orange peel
  • 1 1/2 tsp. grated lemon peel
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 1/2 c. sifted flour
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt

Instructions

  1. Combine shortening, orange peel and lemon peel.
  2. Mix well. Add sugar gradually. Cream until light and fluffy. Add eggs, one at a time.
  3. Beat well after each. Sift together flour, baking powder and salt.
  4. Add to creamed mixture alternately with lemon juice and milk, a small amount at a time. Beat after each addition until smooth.
  5. Bake in 2 paper lined 9 x 1 1/2-inch round cake pans in moderate oven at 375° for 25 to 30 minutes until done. Cool.
