Ingredients

  • 6 cups assorted cut-up fresh fruit
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1 1/2 cups orange juice
  • 1/4 cup lemon juice

Instructions

  1. Mix sugar and cornstarch in a saucepan.
  2. Gradually add orange juice, stirring until smooth.
  3. Bring the mixture to a boil over medium heat and boil for 1 minute.
  4. Remove from heat, then add lemon juice and grated lemon rind.
  5. Allow the mixture to cool.
  6. Fold in the drained assorted cut-up fresh fruit.
  7. Pour the mixture into a cookie crust.
  8. Chill in the refrigerator for 4 hours before serving.
