Ingredients

  • deer, sliced across grain 1/4-inch thick
  • 1 cup cornmeal
  • butter

Instructions

  1. Cut up 1 large, fat hen (6 to 8 pounds) and put in a large pot to cook until tender.
  2. Ensure there is enough broth from the cooked chicken.
  3. Reserve about a quart of broth for the dumplings.
  4. Add the broth to the flour and keep adding flour until the dough is very stiff.
  5. If using plain flour, add salt; if using self-rising flour, do not add salt.
  6. Divide the dough into two parts.
  7. Roll each part until thin.
  8. Cut the dough into dumplings and drop them into boiling broth.
  9. Cook until done, being careful never to stir the dumplings.
  10. Shake the pot gently to prevent sticking.
