Fried Haddock

Ingredients

  • 1 lb. haddock fillets
  • 1/4 c. flour
  • 2 eggs, beaten
  • 2 Tbsp. water
  • 1 c. crushed cornflakes

Instructions

  1. Heat 1/4-inch of fat until very hot.
  2. Cut haddock in serving pieces. Dip in flour, then in egg and water mixture. Roll in cornflakes.
  3. Put fish in hot oil. Fry 5 minutes, turning once. Drain on paper towel.
  4. Makes 3 or 4 servings.
