Fried Mallard

Ingredients

  • 4 mallards (breast only)
  • 1 qt. milk
  • 1 c. milk
  • 1 egg, beaten
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 1 c. flour

Instructions

  1. Remove breast from ducks and chop into pieces.
  2. Marinate in 1 quart milk for 3 1/2 hours.
  3. Remove.
  4. Mix together 1 cup fresh milk, egg, salt and pepper.
  5. Dip duck into milk mixture and then roll in flour.
  6. Preheat vegetable oil and fry at medium temperature until brown.
  7. Serves 6.
