Fried Mallard

Instructions
- Remove breast from ducks and chop into pieces.
- Marinate in 1 quart milk for 3 1/2 hours.
- Remove.
- Mix together 1 cup fresh milk, egg, salt and pepper.
- Dip duck into milk mixture and then roll in flour.
- Preheat vegetable oil and fry at medium temperature until brown.
- Serves 6.
