- Keep fillets cold on ice while preparing.
- Mix corn meal and flour.
- Cut fillets into strips across the fillet about 1/4 inch thick.
- Place in ice water while preparing.
- When ready to cook, drain.
- Salt with garlic and pepper salt.
- Roll in yellow mustard, then in corn meal and flour mixture.
- Drop pieces into hot oil until golden brown.
- Take up and eat.
- Delicious with honey mustard sauce.
