Fried Mud Fish

Ingredients

  • 2 mud fish fillets
  • 1 c. yellow mustard
  • garlic and pepper salt
  • 1/2 c. corn meal

Instructions

  1. Keep fillets cold on ice while preparing.
  2. Mix corn meal and flour.
  3. Cut fillets into strips across the fillet about 1/4 inch thick.
  4. Place in ice water while preparing.
  5. When ready to cook, drain.
  6. Salt with garlic and pepper salt.
  7. Roll in yellow mustard, then in corn meal and flour mixture.
  8. Drop pieces into hot oil until golden brown.
  9. Take up and eat.
  10. Delicious with honey mustard sauce.
