Ingredients

  • 4 eggs, separated
  • 1 1/2 cups sugar
  • Grated rind of 2 lemons
  • Juice of 3 lemons
  • 2 (6 oz.) cans evaporated milk, chilled

Instructions

  1. Cook egg yolks, sugar, grated lemon rind, and lemon juice for three minutes, stirring constantly.
  2. Chill and whip the evaporated milk until fluffy.
  3. Beat egg whites until stiffly beaten.
  4. Place 1/4 inch of graham cracker crumbs in the bottom of an 8-inch square dish.
  5. Pour the lemon mousse mixture into the dish over the crumbs.
  6. Add another 1/4 inch layer of crumbs on top of the mousse.
  7. Cover with plastic wrap and freeze, preferably overnight.
  8. Do not remove until ready to serve.
