- Cook egg yolks, sugar, grated lemon rind, and lemon juice for three minutes, stirring constantly.
- Chill and whip the evaporated milk until fluffy.
- Beat egg whites until stiffly beaten.
- Place 1/4 inch of graham cracker crumbs in the bottom of an 8-inch square dish.
- Pour the lemon mousse mixture into the dish over the crumbs.
- Add another 1/4 inch layer of crumbs on top of the mousse.
