- Heat pan for pancake mix on medium-low.
- Mix pancake mix rather thin, with no lumps.
- Pour 1/4 cup in pan and rotate pan to spread it out thin and evenly.
- Flip.
- Put on plate and spread 3 tablespoons pie filling in line in center of Blintz.
- Add 1 or 2 tablespoons sour cream.
- Fold over as a burrito.
- Pour 1 tablespoon melted butter over lengthwise.
- Garnish with 1 or 2 teaspoons powdered sugar.
