Ingredients

  • 1 can pie filling (we use blueberry or cherry)
  • 1 stick real butter
  • pancake mix (made thin)
  • sour cream
  • powdered sugar

Instructions

  1. Heat pan for pancake mix on medium-low.
  2. Mix pancake mix rather thin, with no lumps.
  3. Pour 1/4 cup in pan and rotate pan to spread it out thin and evenly.
  4. Flip.
  5. Put on plate and spread 3 tablespoons pie filling in line in center of Blintz.
  6. Add 1 or 2 tablespoons sour cream.
  7. Fold over as a burrito.
  8. Pour 1 tablespoon melted butter over lengthwise.
  9. Garnish with 1 or 2 teaspoons powdered sugar.
