Ingredients

  • 3 1/2 cups thinly sliced unpeeled fresh yams
  • 2 red apples, thinly sliced, unpeeled
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon nutmeg
  • 1 cup orange juice

Instructions

  1. Wash yams without peeling and slice them thinly with a very sharp knife.
  2. Wash, core, and thinly slice the apples.
  3. Layer the sliced apples and yams in a lightly oiled 2-quart baking dish, alternating between apples and yams.
  4. Sprinkle the layers with cinnamon, cardamom, and nutmeg.
  5. Pour in the orange juice over the layered fruit and yams.
  6. Cover the dish and bake in a 350°F oven for 1 hour, ensuring it doesn't dry out, adding more orange juice if necessary.
