Fruited Mold

Ingredients

  • 1 c. blueberries (1/2 pt.)
  • 1 c. hulled strawberries, sliced (1/2 pt.)
  • 1 nectarine, pitted and thinly sliced
  • 1 1/2 c. cranberry apple juice
  • 2 (1/4 oz. each) envelopes unflavored gelatin
  • 1 c. honey

Instructions

  1. Coat 8-cup mold with nonstick cooking spray.
  2. Layer blueberries, strawberries and nectarine slices in mold.
  3. Set aside.
  4. In medium saucepan, combine cranberry apple juice, unflavored gelatin, honey and 1 1/2 cups water.
  5. Let stand 5 minutes.
  6. Cook juice-gelatin mixture over low heat for 5 minutes until gelatin is dissolved, stirring constantly.
  7. Carefully pour mixture into mold with fruit.
  8. Chill 3 hours until firm.
