Ingredients

  • 3 2/3 cups self-rising flour
  • 6 tbsp (3/4 stick) cold butter, chopped
  • 1/2 cup toasted tropical muesli
  • 1 cup milk

Instructions

  1. Preheat the oven to 400°F. Line a baking pan with parchment paper. Place the flour and a pinch of salt in a large bowl. Rub in the butter to make crumbs. Stir in the muesli mix.
  2. Add the milk to the flour mixture. Using a spatula, mix until the dough just comes together, adding a little extra milk if too dry.
  3. Turn the dough onto a lightly floured surface and knead gently for 1-2 mins or until smooth. Shape into a 9-inch round, then place on the prepared pan. Using a sharp knife that has been dipped in flour, mark 6 wedges on top of the round. Sprinkle top a little extra flour.
  4. Bake for 30 mins or until the loaf sounds hollow when tapped on the bottom Cool for 5-10 mins. Serve the loaf with butter.
