Ingredients

  • 1 cup fine ground yellow corn meal
  • 1/2 teaspoon salt
  • 1 ounce butter
  • 1/2 teaspoon sugar or honey
  • 1 quart milk
  • 1/4 teaspoon cinnamon

Instructions

  1. In a pot, combine the milk, cornmeal, salt, sugar or honey, and cinnamon.
  2. Cook over medium heat, stirring constantly to prevent lumps and sticking.
  3. Continue cooking until the mixture thickens and becomes creamy, about 15-20 minutes.
  4. Remove from heat and stir in the butter until melted and well incorporated.
  5. Serve hot, optionally with tortillas as bread.
