Garlic Mayonnaise

Instructions
- Cook garlic in 1/4 cup of the safflower oil over moderately high heat for 30 seconds.
- Do not brown garlic.
- Remove garlic and discard.
- Let oil cool slightly.
- In a food processor or blender, combine egg, lemon juice and garlic oil.
- Process until smooth and well blended.
- With motor running, add remaining oil, drop by drop, until mix thickens.
- Then add oil in a steady stream; season to taste with salt and pepper.
- Add additional juice, if desired.
