Ingredients

  • 2 (14 ounce) cans coconut milk
  • 3/4 cup white sugar
  • 1 (20 ounce) can plantain bananas, drained
  • 3/4 cup tapioca pearls
  • 1 (15 ounce) can cut yams, drained
  • 1/2 cup canned jackfruit, drained

Instructions

  1. Pour coconut milk into a saucepan over low heat. Simmer, covered, until gently bubbling, 5 to 10 minutes. Stir in sugar until dissolved. Add plantain bananas and tapioca pearls. Simmer until tapioca and plantains soften, 25 to 30 minutes. Stir in yams and jackfruit.
