Good Old Mashed Potatoes

Ingredients

  • 8 medium potatoes, peeled and quartered
  • 1/4 c. butter or margarine, melted and divided
  • 1/2 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cook potatoes in boiling salted water to cover for 15 to 20 minutes, or until tender.
  2. Drain and mash.
  3. Add 3 tablespoons butter and remaining ingredients, stirring until smooth.
  4. Spoon into a serving bowl; drizzle with remaining 1 tablespoon butter. Serve immediately.
  5. Yields 6 to 8 servings.
