Ingredients

  • 1 standing rib roast
  • salt

Instructions

  1. Let the meat stand at room temperature for 1 hour before cooking.
  2. Preheat the oven to 375°F.
  3. Rub the meat with salt and pepper.
  4. Place the meat, fat side up, in a shallow roasting pan.
  5. Do not cover the roast or add water during cooking.
  6. Cook for 1 hour, then turn off the oven and do not open it until serving time.
  7. Before serving, turn the oven back on 30 to 40 minutes, resetting the temperature to 375°F.
  8. Remove the roast and let it rest briefly before carving and serving.
