Ingredients

  • 3 to 4 lb. green beans
  • 8 c. water
  • 1 c. vinegar
  • 3/4 c. salt

Instructions

  1. String and break the green beans.
  2. Wash the beans and cook until they change color.
  3. Drain off the water and rinse the beans in cold water.
  4. Pack the beans into quart jars, leaving space at the top.
  5. Preheat 8 cups water, 1 cup vinegar, and 3/4 cup salt until boiling.
  6. Pour the boiling mixture over the beans in the jars.
  7. Seal the jars tightly.
  8. Set aside for 10 to 20 days to allow the beans to pickle and develop flavor.
