Granny'S Potato Salad

A classic creamy potato salad with tender potatoes, crisp celery, and onions, balanced by a tangy mayonnaise dressing—perfect for picnics, gatherings, and family meals.

Ingredients

  • 6 to 8 potatoes
  • 3 stalks celery
  • 1 to 2 Tbsp. celery seeds
  • 1 large onion
  • salt
  • pepper

Instructions

  1. Peel and cut up the potatoes.
  2. Boil the potatoes in salted water until soft, about 20 to 30 minutes.
  3. Chop the onion and place it in the bottom of a large bowl.
  4. Drain most of the water from the cooked potatoes, leaving about 1/2 cup of water.
  5. Pour the hot potatoes and water over the chopped onions and let sit for a couple of hours to remove bitterness.
  6. Pour off all the water from the potatoes and onions.
  7. Add chopped celery and mayonnaise, then season with salt and pepper to taste.
  8. Mix well and serve.
