GRAPE-NUTS Banana Nut Bread

Ingredients

  • 1-3/4 cups flour
  • 1 cup sugar
  • 2-1/2 tsp. CALUMET Baking Powder
  • 1/4 tsp. salt
  • 1-1/2 cups wheat and barley cereal nuggets
  • 2/3 cup milk
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 cup mashed ripe bananas

Instructions

  1. Heat oven to 350F.
  2. Mix flour, sugar, baking powder and salt; set aside.
  3. Combine cereal and milk; let stand 3 minutes.
  4. Stir in eggs and oil.
  5. Add to flour mixture, mixing just until moistened.
  6. Stir in bananas.
  7. Pour into greased 9x5-inch loaf pan.
  8. Bake 60 to 70 minutes or until toothpick inserted into center comes out clean.
  9. Cool 5 minutes; remove from pan.
  10. Cool completely on wire rack.
  11. Note: For easier slicing, wrap bread and store overnight.
