Green Kale Soup

Ingredients

  • 1 salty ham hock in large soup kettle
  • 2 c. ground small leaf kale (more if you like)
  • 2 medium onions, coarsely chopped
  • 2 carrots, sliced
  • 1/2 c. uncooked rice
  • sour cream or substitute
  • salt if needed

Instructions

  1. Cover ham with

  3. cook
  4. until
  5. tender.
  6. Add water whenever necessary. Add ground kale, onions, carrots and rice. Cook over low heat 1/2

  9. hour, until kale is well cooked and blended.

  15. do not add carrots until last half hour.
  16. This soup must be salty to be good.
