Ingredients

  • 2/3 cup extra-virgin olive oil
  • 1/4 cup seeded chopped tomato
  • 1/4 cup finely chopped pitted brine-cured green olives (such as Sicilian)

Instructions

  1. Mix all ingredients in small bowl.
  2. Season to taste with salt and pepper.
  3. Let stand 2 hours at room temperature to blend flavors.
  4. (Can be made 3 days ahead.
  5. Cover and chill.
  6. Bring to room temperature before using.)
