Grilled Mixed Vegetable Platter

Ingredients

  • 8 oz thin carrots, peeled
  • 8 oz medium asparagus
  • 2 None bell peppers, sliced
  • 2 None medium red onions, each cut into 8 pieces
  • 1 None yellow summer squash, sliced
  • 1/2 cup light balsamic dressing
  • 1 1/2 tsp chopped fresh thyme leaves

Instructions

  1. Marinate vegetables in 1/4 cup dressing and 1 tsp thyme for 1 hour.
  2. Preheat grill. Cook vegetables over medium-high heat for 3-8 mins, turning occasionally, until tender. Serve with remaining dressing and garnish with remaining thyme.
