Ingredients

  • 2 medium eggplants
  • 1 cup sugar
  • 2 Tbsp margarine
  • 3 tsp cinnamon
  • water

Instructions

  1. Peel and cut up the eggplants.
  2. Add 1 cup water and bring to a boil.
  3. Reduce heat, cover, and cook for 15 minutes.
  4. Add sugar, margarine, and cinnamon.
  5. Stir well.
  6. Cook slowly for 20 minutes more, stirring occasionally, until completely cooked.
