Ingredients

  • 1 cup rice
  • 6 cups water
  • 1/2 teaspoon salt
  • 4 cups milk
  • 5 eggs
  • 1 tablespoon cornstarch
  • 3/4 cup sugar
  • 1 teaspoon almond extract or vanilla

Instructions

  1. Cook rice in salted water until done.
  2. Blanch and drain the rice.
  3. Place the cooked rice and 3 cups of milk in a double boiler.
  4. Separate the eggs and beat the yolks well.
  5. Add sugar, cornstarch, and one cup of milk to the egg yolks.
  6. Combine the egg mixture with the rice and cook until thick, stirring frequently.
  7. Remove from heat and add the almond flavoring.
  8. Pour the mixture into a buttered baking dish and bake as desired.
