Ingredients

  • 2 lbs unsalted butter (8 sticks)
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 16 ounces almonds, shredded
  • 32 ounces soft-as-silk flour

Instructions

  1. Preheat over to 380 degrees.
  2. Combine Butter, Sugar, and Vanilla in Mixer -- Start mixer on low setting and increase to high until Fluffy.
  3. Reduce speed back to low-med and add Shredded Almonds...Once combined, remove mixture to a large bowl.
  4. A little at a time, add the Flour into the mixture by hand until combined...If mixture is too soft to shape cookies add regular unbleached Flour.
  5. Flour your board and roll dough out to about 1/4" thick.
  6. Spray cookie sheet with non-stick cooking spray.
  7. Dip cookie cutter in flour and cut out shapes.
  8. Re-roll dough and cut out cookies until all dough is used.
  9. Place cookes on cookie sheet and bake for about 12-14 minutes...This depends on your oven so keep an eye on them.
  10. While cookies are still warm but not hot, dip each cookie in Sugar.
