- To marinate the cheese: Mix together the herbs, garlic, olive oil and onion in a bowl. Add the cheese and toss to coat in the marinade
- Heat a nonstick frying pan, add the cheese and fry on both sides for 2-3 mins on a high heat, pouring in the marinade just before removing the cheese from the pan. Set the cheese aside.
- Cut the burger buns in half and spread both sides with pesto. Layer with peppers, cheese, arugula, and onions and serve immediately.
