- Place crackers neatly in an 11 x 16-inch cookie sheet or jelly roll pan.
- Trim the last row and column to fit the pan.
- Crackers must fit together tightly.
- Sprinkle crackers lightly with red pepper.
- Coarsely grate the cheese directly over the crackers as evenly as possible.
- Turn on broiler.
- Place pan on bottom rack and leave door open.
- After a few minutes, the cheese will begin to bubble.
- When the cheese begins to dry out and most of the bubbles are firm on top, remove the pan from the oven.
- Allow the oven to cool.
- Return the pan to the oven set at 150°.
- Bake and close oven door.
