Ingredients

  • 2 cans coconut milk
  • 1 cup sugar
  • 1 cup water
  • 7 tablespoons cornstarch
  • 1/3 cup water (for cornstarch slurry)
  • 1 box instant vanilla pudding
  • 1 1/2 cups milk

Instructions

  1. In a medium saucepan, mix together coconut milk, sugar, and water.
  2. Cook over medium heat until the mixture is warm.
  3. Combine cornstarch with water to create a slurry.
  4. Add the cornstarch mixture to the saucepan, stirring constantly until the mixture thickens.
  5. Pour the thickened coconut mixture into a baked pie shell and let it set.
  6. Prepare the vanilla pudding with milk according to package instructions.
  7. Once set, spread the vanilla pudding evenly over the cooled coconut layer.
  8. Top with Cool Whip and refrigerate until ready to serve.
