- Cover beans with 2 inches of water in a large pot; add olive oil, 1 teaspoon salt, bay leaf, and sage (or other fresh herb).
- Bring to a boil, then reduce heat and simmer until beans are tender, about 30 to 45 minutes (depending on the age of the beans); turn off heat and let beans cool in their broth.
- When ready to serve, reheat beans, in the same pot, over medium heat.
