Herbed Popovers

Instructions
- Heat oven to 375°.
- Place cast iron popover pans into oven to heat.
- In a medium bowl, beat eggs until frothy.
- Beat in milk and butter.
- Add flour, basil and salt to egg mixture.
- Beat at low speed until smooth.
- Carefully remove hot popover pan from oven. Grease with vegetable shortening.
- Divide batter into popover cups.
- Bake 35 to 40 minutes or until puffed and firm on top. Serve immediately.
- Makes 8 popovers.
