Holiday Fruit Pudding

Ingredients

  • 1 egg
  • 1/4 c. sugar
  • 3 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 2 c. milk
  • 1 Tbsp. butter or margarine
  • 1 tsp. vanilla
  • 2 c. canned fruit cocktail, drained

Instructions

  1. Beat egg in saucepan.
  2. Stir in sugar, cornstarch and salt. Stir in milk; cook and stir over medium heat until thickened. Cook and stir 1 minute longer.
  3. Stir in butter and vanilla.
  4. Add fruit.
  5. Cool before serving.
  6. Serves 6.
