Ingredients

  • 2 c. cooked brown rice
  • 1 c. steamed carrots, 1-inch sticks
  • 2 c. steamed green peas
  • 1/2 c. steamed red peppers
  • 1/2 c. steamed yellow peppers
  • 1 c. sliced black olives
  • 3 cloves garlic, minced
  • 1/2 c. onions, sliced in rings
  • 2 Tbsp. oil

Instructions

  1. Saute onions and garlic.
  2. Do not overcook.
  3. Mix in all other ingredients.
  4. Toss and simmer for 5 minutes.
  5. Serve as a side dish.
