- Bring water to a boil with butter.
- Add rice, stir well, cover and cook on low heat for 20 minutes or until all water is absorbed.
- Add 5 cups of milk, reduce heat to low and bring to a simmer and stir for 20 minutes.
- Add 2 cups of milk, bring to a simmer and stir for additional 20 minutes.
- Add evaporated milk, bring to a simmer and stir for additional 20 minutes.
- Add remaining cup of milk, bring to a simmer and stir for another 20 minutes.
- Stir in sugar, stirring frequently for 10 minutes.
- Combine eggs and vanilla, add 2 to 3 cups of hot rice mixture, stirring vigorously so eggs are well incorporated.
- Add back to pot, stir well and cook for additional 3 minutes.
- Sprinkle with cinnamon and chill.
