Honeydew Melon Pops

Ingredients

  • 4 cups diced (1/2 in. cubes) ripe honeydew melon
  • 1/3 cup plain yogurt
  • 3 lime juices
  • grated zest of 1 lime

Instructions

  1. 1) Combine: 2 cups of melon w/yogurt, lime juice, and zest in food processor/blender until smooth.
  2. 2) Microwave honey for 30 seconds until thinned.
  3. 3) Add honey to melon mixture, process again to combine.
  4. 4) Stir in remaining 2 cups of melon.
  5. 5) Fill pop molds w/mixture, insert sticks, freeze for 6 hours.
  6. 6) Remove from freezer, let stand for 5 minutes to remove mold.
