Ingredients

  • 3 cans black-eyed peas
  • 1 medium onion
  • 1 c. Minute rice
  • 1 1/2 c. water
  • salt

Instructions

  1. Fry the sausage and drain the excess fat.
  2. Add the black-eyed peas along with their juice, diced onion, salt, pepper, water, and cooked sausage to the pot.
  3. Bring the mixture to a boil and cook on medium heat for 30 to 45 minutes.
  4. Add the cooked rice and let the soup simmer for an additional 10 minutes.
