Hummus and Vegetable Wrap

Ingredients

  • 2 cups Shredded Vegetables (zucchini, Mushrooms, Carrots)
  • 1/4 cups Onion, Diced
  • 1 Tablespoon Olive Oil
  • 4 whole Sandwich Wraps (I Used Spinach Herb)

Instructions

  1. Use whatever vegetables you like or have on hand.
  2. Shred them all together in a big bowl and add the onion.
  3. Toss them all together to combine.
  4. In a skillet over medium heat, add the olive oil and vegetables.
  5. Toss slightly to coat and saute the veggies.
  6. Dont over-cook them.
  7. You want the vegetables to be cooked until they are just done, so they are still crisp and firm.
  8. Prepare your wraps by spreading 1/4 cup of hummus on each wrap.
  9. When the vegetables are ready spoon 1/2 cup of the vegetables on each wrap (on top of the hummus).
  10. Fold in the ends and then roll up the wrap so that all ends are tucked in and you have made a neat roll.
  11. Heat a separate nonstick skillet over medium heat and place the wraps in the skillet.
  12. Heat on each side until the wraps are lightly brown and toasted.
