Jam Muffins

Ingredients

  • 1/4 c. oil
  • 2 c. self-rising flour
  • 1/3 c. sugar
  • 1 egg, well beaten
  • 1 c. sweet milk

Instructions

  1. Combine flour and sugar in a mixing bowl.
  2. Add oil, egg and milk to dry ingredients.
  3. Stir quickly with a fork until the dry ingredients are moistened.
  4. The batter should be lumpy.
  5. Spoon batter into greased muffin cups until they are half full.
  6. Add 1 teaspoon of jam.
  7. Cover with remaining batter.
  8. Bake in a 400° oven until brown.
