Instructions
- Combine flour and sugar in a mixing bowl.
- Add oil, egg and milk to dry ingredients.
- Stir quickly with a fork until the dry ingredients are moistened.
- The batter should be lumpy.
- Spoon batter into greased muffin cups until they are half full.
- Add 1 teaspoon of jam.
- Cover with remaining batter.
- Bake in a 400° oven until brown.
