Ingredients

  • 1 can evaporated milk
  • 1 small box lemon jello
  • 1/2 to 1 cup sugar
  • 1 tablespoon vanilla
  • 1/4 cup ReaLemon juice
  • vanilla wafers

Instructions

  1. Chill a large mixing bowl in the refrigerator.
  2. Mix the lemon jello according to the directions and refrigerate until it begins to set.
  3. Crush vanilla wafers and set aside some for topping.
  4. Remove the jello from the refrigerator and beat with a mixer for at least 5 minutes until most large bubbles are gone.
  5. Pour the chilled evaporated milk into the chilled bowl and beat on high speed for at least 5 minutes until thick and smooth.
  6. Fold in the jello mixture, sugar, vanilla, and lemon juice until well combined.
  7. Spoon the jello/milk mixture onto the crushed wafers layer in a 13 x 9-inch dish.
  8. Sprinkle the remaining crushed wafers on top.
  9. Refrigerate until firm and serve.
