- Chill a large mixing bowl in the refrigerator.
- Mix the lemon jello according to the directions and refrigerate until it begins to set.
- Crush vanilla wafers and set aside some for topping.
- Remove the jello from the refrigerator and beat with a mixer for at least 5 minutes until most large bubbles are gone.
- Pour the chilled evaporated milk into the chilled bowl and beat on high speed for at least 5 minutes until thick and smooth.
- Fold in the jello mixture, sugar, vanilla, and lemon juice until well combined.
- Spoon the jello/milk mixture onto the crushed wafers layer in a 13 x 9-inch dish.
- Sprinkle the remaining crushed wafers on top.
- Refrigerate until firm and serve.
