Ingredients

  • 1 3/4 cups syrup (at 32° Baume)
  • 2 lemons, juice
  • 1 orange, juice
  • 8 kiwis, pureed

Instructions

  1. Strain the pureed kiwis and add to the cooled syrup.
  2. Pour the mixture into an ice cream machine and churn until frozen.
  3. Add Italian meringue to the sherbet before serving for a light, airy finish.
