Ingredients

  • 3 1/2 cups chopped onion
  • 9 large sweet red peppers (4 1/2 lb.), seeded and chopped
  • 1 tablespoon sherry wine vinegar or cooking sherry and white wine vinegar
  • 2 teaspoons olive oil
  • 3 (10 1/2 oz.) cans no-salt-added chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Saute onion in olive oil in a large Dutch oven for 5 minutes or until tender.
  2. Add sweet red peppers and chicken broth; bring to a boil.
  3. Cover, reduce heat, and simmer for 15 minutes.
  4. Remove from heat and serve.
