Ingredients

  • 1 lemon
  • 6 Tbsp. water
  • 1/2 cup shortening
  • 1 egg
  • 1 package (about 19 oz.) yellow cake mix

Instructions

  1. Trim a thin slice from both ends of the unpeeled lemon; cut in half lengthwise.
  2. Remove the white center core with a shallow V-shaped cut; then cut the lemon halves into small chunks.
  3. In an electric blender, puree the lemon chunks with water until smooth.
  4. Add shortening and egg; blend until smooth.
  5. In a large bowl, combine the yellow cake mix and the lemon mixture; mix well.
  6. Drop spoonfuls of batter onto lightly greased cookie sheets.
  7. Bake at 350°F (175°C) for 13 to 15 minutes.
