Ingredients

  • 1 1/4 cups water
  • 3/4 cup lemon juice
  • 1 large or 2 small packages lemon jello
  • 2 pints vanilla ice cream
  • coconut

Instructions

  1. Put the water and lemon juice on fire and bring to a boil.
  2. Add the lemon jello to the boiling mixture; stir until dissolved and cool.
  3. When beginning to congeal, mix in the vanilla ice cream.
  4. Mix with an electric mixer until the ice cream is smooth.
  5. Add a handful of coconut to the mixture.
  6. Pour into a prepared pie shell; sprinkle coconut on top.
  7. Refrigerate until set before serving.
