Ingredients

  • 3 oz. lemon gelatin
  • 1 c. hot water
  • 1 c. sugar
  • 1/4 c. lemon juice
  • 13 oz. evaporated milk, chilled
  • 1/2 tsp. salt
  • 1 c. crushed vanilla wafers

Instructions

  1. Dissolve lemon gelatin in hot water in a bowl.
  2. Add sugar and lemon juice; mix well and chill until slightly congealed.
  3. Beat chilled evaporated milk at high speed until very fluffy, adding salt while beating.
  4. Gently fold the whipped milk into the slightly congealed gelatin mixture until well combined.
  5. Line a 9 x 13-inch pan with crushed vanilla wafers.
  6. Pour the gelatin mixture over the wafer crumbs and chill thoroughly before serving.
