- Combine sugar, water, and light syrup in a saucepan.
- Cook over medium heat, stirring constantly, until the mixture reaches the hard crack stage (about 300°F or 150°C).
- Remove from heat and stir in lemon flavoring and food coloring until well mixed.
- Pour the hot syrup onto wax paper in small circles or desired shapes.
- Insert sticks into the warm syrup before it hardens completely.
- Allow the lollipops to cool and harden completely before removing and serving.
