Ingredients

  • 3 3/4 cups sugar
  • 1 cup water
  • 1 1/4 cups light syrup
  • 1 teaspoon lemon flavoring
  • 1 teaspoon food coloring

Instructions

  1. Prepare wax paper and sticks for the lollipops.
  2. Combine sugar, water, and light syrup in a saucepan.
  3. Cook over medium heat, stirring constantly, until the mixture reaches the hard crack stage (about 300°F or 150°C).
  4. Remove from heat and stir in lemon flavoring and food coloring until well mixed.
  5. Pour the hot syrup onto wax paper in small circles or desired shapes.
  6. Insert sticks into the warm syrup before it hardens completely.
  7. Allow the lollipops to cool and harden completely before removing and serving.
