Lemon Pie(9-Inch)

Ingredients

  • 1 1/2 c. sugar
  • 1/3 c. plus 1 Tbsp. cornstarch
  • 1 1/2 c. water
  • 3 egg yolks, slightly beaten (reserve whites for meringue)
  • 3 Tbsp. margarine
  • 1/2 c. lemon juice
  • 2 drops yellow food color (optional)

Instructions

  1. Bake 9-inch pie shell at 400°.
  2. Mix sugar and cornstarch together; add water 1/2 cup at a time.
  3. Heat over medium heat, stirring constantly.
  4. Bring to boil (it will thicken) for 1 minute.
  5. Pour 1/2 hot mixture into egg yolks; stir well.
  6. Return mixture to saucepan and boil 1 minute longer.
  7. Remove from heat; add margarine, lemon juice and food color.
  8. Stir until blended. Pour into pie shell; let cool.
